Simple Berry Crumble
Ingredients
For the filling:
2 cups mixed berries (fresh or I use frozen—blueberries, raspberries, blackberries, strawberries, etc.)
2 Tbs sugar (or honey/maple syrup)
1 tsp cornstarch (or arrowroot flour)
For the crumble topping:
1/2 cup rolled oats
1/4 cup flour (all-purpose or almond flour for gluten-free)
1/4 cup brown sugar or coconut sugar
1/2 tsp cinnamon
Pinch of salt
1/4 cup melted coconut oil or butter
Instructions
Preheat oven to 350°F (175°C).
Prepare filling: In a bowl, mix berries with sugar, lemon juice, and cornstarch until evenly coated. Spread into a lightly greased ceramic baking dish.
Make crumble topping: In another bowl, stir together oats, flour, sugar, cinnamon, and salt. Add melted coconut oil/butter and mix until crumbly.
Assemble: Sprinkle the crumble mixture evenly over the berries.
Bake: 35–40 minutes, until the topping is golden brown and berries are bubbling.
Serve warm with vanilla ice cream, whipped cream, or coconut yogurt.
