Vegan Horchata Recipe
This classic Mexican drink gets a plant-based twist! Creamy, lightly sweet, and spiced with cinnamon, this vegan horchata is a refreshing dairy-free option you can enjoy year-round.

Ingredients (4 servings)
1 cup long grain white rice
2 cups water (for soaking)
2 cups coconut milk (or preferred plant milk)
2 tbsp maple syrup (or agave)
1 tsp vanilla extract
1 tsp ground Ceylon cinnamon
Instructions
Rinse rice. Soak in 2 cups water for at least 3–4 hours (or overnight).
In a High Speed Blender, blend soaked rice + water until smooth. (This Blender is just as good as the big brand)
Strain through cheesecloth or fine mesh.
Stir in almond milk, maple syrup, vanilla, and cinnamon.
Chill and serve over ice.
