Quick Pickled Red Onions

Ingredients

  • 1 red onion thinly sliced into half moons

  • 1 cup water

  • 1 cup white vinegar ( apple cider, red)

  • 2 T. Sugar (honey, maple syrup)

  • 1.5 tsp sea salt

  • Optional add ins: 1/2 tsp. peppercorns, 1 smashed clove garlic, 2 sprigs of fresh thyme, a few slices of Jalapeño,

    Instructions

    1. Prep onions: Thinly slice red onion. Place slices in a clean pint size mason jar. Add in any flavor options you like

    2. Make the brine: In a small sauce pan combine water, vinegar, sugar, and salt. bring to a simmer, stirring to disolve the salt and sugar

    3. Pour and Soak: Carefully pour the hot brine over the onions making sure they are completely submerged, pressing them down if needed.

    4. Cool and Store: Let ehe jar sit at room temperature until cooled, about 20-30 min. Seal with a lid and refrigerate.

    *Storage: Keeps well in the fridge for unto 3 weeks. Best after: 24 hours for deeper flavor
